Lane Kiffin took a new coaching job at LSU, even though Ole Miss qualified for the playoff. He asked Ole Miss to let him coach the team for the playoff anyway, but they correctly said no.

Lane Kiffin then gave an ultimatum to all of Ole Miss' coaching staff "If you want to come with me to work at LSU, you have to quit immediately." I.e., he poached all of Ole Miss' assistant coaches, and now they have no staff for their upcoming playoff game, except for one assistant coach who was promoted to Ole Miss new head coach.

What motivates people to do things like this?
It's a mystery to me.

Yeah, he isn't just taking the LSU job. He's trying to do maximum damage to Ole Miss on the way out, as "revenge" for not letting him coach the playoffs.

Ole Miss was offering to cash match LSU's offer, so "he got paid more" isn't a valid reason to switch.

There isn't "you can't win at Ole Miss". He has a playoff team this year.

However, the way the college football calendar works for recruiting and transfer portal means LSU needs a new coach NOW. They can't wait until they playoff is over to hire someone. I.e., the new coach will be recruiting people in the January transfer portal.

The funny thing is that, if he doesn't immediately win at LSU, he's going to get fired real quick. Whereas at Ole Miss, after a record-setting season, he probably could have a few mediocre seasons without getting fired.

What he did was nasty. He left Ole Miss in a lurch at a crucial time and then expected them to let him coach their playoff team after he took another job? He probably didn't get along well at Ole Miss before he got his new job.

I think Lane Kiffin may have damaged his reputation in college circles because of how he left Ole Miss.

Lane Kiffin has left multiple jobs on questionable terms. After awhile, you say the common factor is Lane Kiffin, rather than him just being unlucky and working for an abusive boss several times in a row.
